The USDA Nutrient Database offers food composition tables for more than 6,000 foods. A quick search for "cheese" yielded nutritional data for everything from baby food and crackers to feta and fontina. The tables provide information on proximates (water, protein, fiber), minerals, vitamins, lipids and amino acids.
